Vietnamese Salad Rolls

Ryan and I love going out for Vietnamese food to eat phở and bún.  When we feel like having an appetizer, we typically order deep fried spring rolls.  However, I LOVE eating Vietnamese salad rolls, but I always feel guilty when ordering them since they seem like something we could easily make at home!  Salad rolls are so healthy and they have such a delicious taste with all the different textures and flavours of the ingredients inside.  We followed this recipe to make our own delicious salad rolls at home.

Prepping all the ingredients takes the most time as there is a lot of chopping involved.  We finely chopped the lettuce and the basil, julienned one carrot, soaked the vermicelli and boiled the shrimp.  The dry rice wrappers in the bottom right corner are ready to go.

Our workstations are all set up with me on one side and Ryan on the other!  We have a bowl of hot water in the middle to dip our rice wrappers and cutting boards on either side to lay our wrappers flat.  When dipping the rice wrapper in hot water, submerge it for about 5-10 seconds.  The wrapper should feel damp and will continue to soften as we add our ingredients.

On the bottom edge of the wrapper, we add shrimp, carrots, basil and lettuce.

We finish it up with some vermicelli.

And now it’s wrapping time!  Fold the bottom edge, the two sides and then continue rolling upwards.

Ta da!  For our dipping sauce, we used hoisin sauce mixed with some water.  I’m so happy that we can now make these whenever we want as a healthy and delicious snack!!!
